Ingredients
2 lb 2 Brussel sprouts
1 c 1 Pomegranate seeds
1/2 c 1/2 Toasted pinenuts (pumpkin seeds okay too)
1/2 c 1/2 Nutritional yeast
1/4 c 1/4 Olive oil
4 T 4 Sherry Vinegar
1/2 t 1/2 Salt
Black pepper to taste
1/2 t 1/2 Dijon mustard
2 t 2 Maple syrup
2 Drops 2 Stevia liquid
Instructions
- Shave cleaned brussels sprouts with a mandoline or cut them as thin as possible avoiding the stem
- Toast the pinenuts on a dry pan until they are toasted and fragrant
- Add brussels, pinenuts, pomegranate seeds and nutritional yeast to a serving bowl
- Add the dressing ingredients to a jar with a lid and shake well
- Pour a bit over the salad and toss. Taste and add more a bit at a time tossing each time until there is the right amount of dressing and the salad is wilting a bit.
- Top with flake salt and pepper
