The Massaged Kale Salad is a vibrant and nutritious dish featuring fresh kale and tender asparagus, tossed in a creamy avocado dressing. The kale leaves are massaged to soften and infuse with flavor, creating a delightful texture. This salad is accented with the subtle sweetness of dried cranberries and the smoky crunch of the smoked almonds, offering a harmonious balance of flavors and textures. It’s a refreshing and satisfying option that’s perfect for any meal or occasion.

Ingredients

  • 1 bunch de-stemmed kale

  • 1/2 c cranberries

  • 1/2 c chopped, smoked almonds or regular chopped almonds or walnuts

  • 15 roasted cherry tomatoes

  • Dressing
  • 1 ripe avocado

  • 2 T lemon juice

  • 2 T water (adjust as needed for desired consistency)

  • 1 T maple syrup or agave syrup

  • Salt and pepper to taste

Instructions

  • Preheat oven or toaster over or air fryer to 450 degrees
  • Spray tomatoes with olive oil then roast the tomatoes whole or halved in a 450 degree oven for about 10-15 mins. They will get very soft and be falling apart
  • Wash then de-stem the kale and rip it into bite sized leaves
  • Make the dressing
  • Pour the avocado dressing over the kale mixture and use your hands to massage the dressing into the kale leaves until they soften and wilt slightly.
  • Let the salad sit for about 10-15 minutes to allow the flavors to meld.
  • Add the nuts and cranberries and ENJOY the gooness!!!
  • Dressing
  • Scoop the flesh of the avocado into a blender or food processor.
  • Add lemon juice, water, maple syrup, salt, and pepper.
  • Blend until smooth and creamy, adding more water if needed to reach your desired consistency.
  • Adjust seasoning to taste, adding more salt, pepper, or lemon juice if desired.
