The Massaged Kale Salad is a vibrant and nutritious dish featuring fresh kale and tender asparagus, tossed in a creamy avocado dressing. The kale leaves are massaged to soften and infuse with flavor, creating a delightful texture. Ingredients
1 bunch de-stemmed kale
1/2 c cranberries
1/2 c chopped, smoked almonds or regular chopped almonds or walnuts
15 roasted cherry tomatoes
- Dressing
1 ripe avocado
2 T lemon juice
2 T water (adjust as needed for desired consistency)
1 T maple syrup or agave syrup
Salt and pepper to taste
Instructions
- Preheat oven or toaster over or air fryer to 450 degrees
- Spray tomatoes with olive oil then roast the tomatoes whole or halved in a 450 degree oven for about 10-15 mins. They will get very soft and be falling apart
- Wash then de-stem the kale and rip it into bite sized leaves
- Make the dressing
- Pour the avocado dressing over the kale mixture and use your hands to massage the dressing into the kale leaves until they soften and wilt slightly.
- Let the salad sit for about 10-15 minutes to allow the flavors to meld.
- Add the nuts and cranberries and ENJOY the gooness!!!

- Scoop the flesh of the avocado into a blender or food processor.
- Add lemon juice, water, maple syrup, salt, and pepper.
- Blend until smooth and creamy, adding more water if needed to reach your desired consistency.
- Adjust seasoning to taste, adding more salt, pepper, or lemon juice if desired.
