Ingredients
- Roasted Chickpeas aka Garbanzos
1 can garbanzos
1 tsp chili powder
1 tsp coriander powder
1 tsp smoked paprika
1/2 tsp monk fruit sweetener
1 sprinkle salt
few spritzes olive oil
grind black pepper
- Roasted Broccoli
3 Broccoli crowns and peeled stems chopped into 1/2 inch bits
2 tsp cumin
1 tbsp chili powder
1 tsp french thyme
1/2 tsp salt
spritz olive oil
- Black Bean and Corn
1 can black beans
1 1/2 cups kernel corn
1 tsp paprika
1/2 tsp smoked paprika
1 tsp cumin
1 tbsp lime juice
2 chopped chopped green onions
1/2 cup chopped cilantro leaves and tender stems
1/8 tsp black pepper
1/4 tsp salt (optional)
- Additional Toppings and Tortillas
4 the biggest whole grain tortillas you can find
1 can refried pinto beans
salsa
avocado
cilantro
lime wedges
shredded iceberg lettuce
- Optional Sour Cream
1 cup soaked for 4 hours cashews
1 tsp lemon
1/4 tsp salt
Instructions
- Roasted Chickpeas aka Garbanzos
- Preheat oven to 375.
- Combine all spices in a bowl. Spritz garbanzos with olive oil and then add to the spices to evenly coat.
- Pop in the oven and bake until the garbanzos are just browning, but not drying out. This will take approximately 15 mins. Feel free to use an air fryer for this step. They come out great!
- Roasted Broccoli
- Chop all of your broccoli and peeled stems.
- Combine all of the spices.
- Spritz broccoli with olive oil.
- Sprinkle with spices and add it to the oven with the garbanzos which should almost be ready. Broccoli will take approximately 20 mins to roast up nicely.
- Corn and Black Bean Saute
- Combine spices in a bowl.
- Broth saute corn kernels and beans for about 5 min.
- Add spices (not cilantro and onions) to saute.
- Remove from heat and top with cilantro and onions.
- Squeeze lime over entire saute.
- Assemble Burritos
- Heat tortillas until they are warm and pliable. Assemble your burritos and depending on the type of tortilla, you can fold it like a burrito or fold it in half like a taco. When heated, Ezekiel tortillas become stiff, so it’s better to fold these like a taco.
- Eat and enjoy!
- Optional Sour Cream
- Blend all of the cashew cream until smooth. Give it a taste and decide whether it needs a little more lemon or a little more salt. Refrigerate until ready to use, keeps 5 days.
