Cucumber Cooler Mocktail

kcalNormally you would not find a Mocktail recipe in our Cancer-Kicking! Kitchen, but 2020 has hardly been normal. There are antioxidants in citrus fruits, of course, but juices allow for rapid sugar absorption and insulin spikes whereas whole fruit consumption avoids those responses.
So while this recipe does not contain the amazing cancer-fighting ingredients we generally include in all of our other recipes, limiting your alcohol consumption is a big enough Cancer-Kicking! reason itself to include them. Now, on to our Cucumber Cooler Mocktail. I love this recipe when I’m feeling hot and bothered and need something refreshing, but water itself won’t do the trick. Sometimes you just need that extra flavor and this recipe comes to your rescue. Perfect for the weekend when you would otherwise reach for that Mojito or Piña Colada.

Ingredients
5 slices of muddled cucumber
1 oz of agave nectar
1 oz of fresh lime juice
1.5 oz of club soda
Some mint, lime and cucumber slices
Instructions
- Muddle cucumber and agave nectar in the bottom of a cocktail shaker
- Add the lime juice and shake with ice
- Pour drink with the ice into a glass
- Top with club soda
- Stir and garnish with cucumber and lime slices
- And to turn this innocent cooler into the real deal, just add a shot of your vodka and you’re all set. However, please drink responsibly (and not frequently) and supplement to minimize the negative health effects.
