Growing up, we always had English muffin pizzas. This is a much healthier version and you can customize your toppings – the sky is the limit! This is a nice well-rounded blend of ingredients that toast up well and taste great together. If you have kids, it’s OK to sprinkle a little vegan cheese on there! We usually stay away from it since vegan cheese is generally not that healthy. That said, if it will get your kids to eat these little guys, then go for it!

Ingredients

  • 1 Ezekiel English Muffin (any other grainy high fiber English muffin also works.)

  • 2 -3 T Pizza or marinara sauce

  • 2 T Grated zucchini

  • 1 T Chopped artichokes hearts from glass jar. Oil rinsed if in oil.

  • 1 T Green or black olives, sliced

  • 1 T Roasted peppers, sliced thin

  • pinch Oregano

  • pinch Basil

  • Vegan parmesan

Instructions

  • Add sauce to the english muffin.
  • Sprinkle with herbs.
  • Add your veggie toppings.
  • Toast in the toaster oven for 6-8 mins. You could also use an air fryer for about 5 minutes.
  • Top with vegan parmesan. If you would like the vegan parmesan toasted or melted a little, then add it before you toast.
  • Enjoy!
