Pretty much anyone who has been vegan for quite some time, like 2-3 days, will say that the food she misses the most is cheese. For me, smoked gouda was one of the must-haves on any worthy cheese platter. So imagine my delight when this recipe popped into existence! I hope you love it as much as I do. Granted, due to the use of full fat coconut milk, I consider this one for birthdays and CEO (Christmas Easter Only).

Ingredients
1 13.5 oz can coconut milk full fat
1/2 cup hot water
1 1/4 tsp salt
1 tbsp nutritional yeast
2 tbsp agar agar powder (not flakes)
1/4 tsp garlic powder
2 tbsp liquid smoke (hickory or mesquite flavored) or sub 1 tsp smoked paprika
Instructions
- Prepare cheese mold(s) to hold a total of 2 cups of cheese: spraying a glass bowl or container with spray oil to prevent sticking.
- Pour the can of coconut milk into a saucepan.
- Add 1/2 cup of hot water and all remaining ingredients to the saucepan and stir with a whisk until it boils.
- Turn down the heat so the cheese sauce barely boiling and stir constantly for 6 minutes.
- Immediately pour into the prepared cheese mold(s).
- Cool uncovered for 15 minutes at room temperature, then cover and chill in the refrigerator for at least 2 hours to firmly set.
