minutesThis is the simplest salad you will ever love! The savory of the nuts and the sweet of the dates combines with the crunch of the celery, creating a very fun flavor profile. It’s very refreshing and is best eaten at once. If you would like to store it, keep some aside that you haven’t added the almonds too. Once they are in the salad, they tend to get soften up so they need to be added right before enjoying the salad.

Ingredients
8 stalks washed celery
small handful smoked almonds
6 dates
1 tsp lemon zest
1-2 lemons for squeezing
sprinkle salt and pepper
sprinkle vegan parmasan (optional)
Instructions
- Slice the washed celery into quarter inch pieces
- Chop the nuts finely
- Cut the dates into very small pieces
- Combine ingredients in a bowl
- Squeeze some lemon juice over the salad
- Enjoy!!!
