The Weirdest Sandie You’ll Ever Love

minutesSometimes weird is good! These are ingredients that are generally not put together, but when they are, they are a wow! Not only nutritionally, but your taste buds will thank you for this lovely combo! We usually make these open faced, but feel free to put a top on it and make it a proper sandwich. It’s definitely a fork and a knife type of deal if it’s open faced, but well worth the effort!

Ingredients
1 or 2 sices High fiber grainy bread
1/2 block Savory tofu (teriaki, savory, sriracha all work well)
1/4 cup Sauerkraut – Use whatever kind looks good in the refrigerated section. Canned sauerkraut is convenient, but does not have any of the healthy pre-and probiotics left due to the canning process.
1/4 cup Sprouts
2 tbsp Hummus
1 tbsp Dijon mustard (you can use less or none if you’re not a huge mustard fan)
Instructions
- Toast your one or two slices of bread.
- Cut the tofu into thin slices (about 1/4 inch thick) and pan sear them for a couple minutes on each side. It’s okay to spray the pan with a touch of oil if your pan isn’t super non stick.
- Spread some hummus on the bread. Put on some dijon, then add the tofu, sauerkraut, and sprouts. If you are adding bread to the top, add more hummus and dijon to it then slap it on top of your yummy mess of a sandwich!
- If you’re doing an open faced sandwich, pull out a fork and knife and dive in.
