Tofu Veggie Skewers

minutesThese tofu veggie kebabs are absolutely delicious and go with just about anything. We have them often and serve them with rice, baked beans, corn on the cob, or anything else you can think of that you’d serve up at a the summer barbecue. They can also be a quick meal all by themselves.

Ingredients
1-2 Blocks Tofu
1 Red bell pepper, cut into chunks.
1 Green bell pepper, cut into chunks
1 Orange or yellow bell pepper cut into chunks
1 Red onion cut into 1” x 1/2” chunks
2 Zucchini cut into 1/2 inch rounds
8-10 Button mushrooms, cleaned with just the bottom cut off
- Tofu Marinade
3 T Tamari or soy sauce
2 T Hoisin (optional, but gives it a little more flavor)
1 T Sesame oil
2 Cloves Minced garlic
1 T Grated ginger
1 T Maple syrup
1 t Sriracha – optional, if you would like some heat
Wooden or metal skewers
Instructions
- Press the tofu, then cut it into 1 inch chunks.
- Make the marinade by adding all the marinade ingredients together in whisking them.
- Add tofu to the marinade for 15 to 20 minutes
- Cut all the veggies, so they are skewer ready at about the same size and width
- Add the tofu and the veggies, alternating on the skewers until you have none left
- Grill for 10 to 15 minutes turning frequently
- If desired, brush them with the leftover marinade when they are almost done.
