Urgent warning! These vegan baked beans will send you down the street talking to yourself. You will definitely not miss the ham, or hot dogs, or all the other weird things people put in baked beans! They’re so good, eat them at your own risk!

Ingredients

  • 2 cans Canned pinto or navy beans, drained, and rinsed

  • 1 Onion finally, chopped

  • 2 cloves Garlic, whole, or minced

  • 1/4 cup Tomato paste

  • 1/4 cup Maple syrup or molasses

  • 2 tbsp tamari or soy sauce

  • 1 tbsp Apple cider vinegar

  • 1 tbsp Dijon mustard

  • 1 tsp Smoked paprika

  • 1/2 tsp Chili powder

  • 1/2 tsp Ground cumin

  • Couple dropa Liquid smoke (optional)

  • Salt and pepper

  • 1 cup Vegetable broth

  • 1-2 tbsp Arrowroot starch

Instructions

  • Preheat your oven to 350°
  • It’s a large oven, safe skillet or pot, sauté onion, and garlic in water or broth until it becomes translucent and fragrant.
  • Add the tomato paste, maple syrup or molasses, tamari or soy sauce, Dijon mustard, apple cider vinegar, smoked paprika, cumin, chili powder, salt, and pepper. Stir well to combine and let the mixture cook for about 2-3 minutes to develop the flavors.
  • Add the drained and rinsed beans to the skillet and stir until they are well coated with the sauce.
  • Pour in the vegetable broth or water, ensuring that the beans are submerged in the liquid. If you prefer thicker baked beans, you can mix 1-2 tablespoons of cornstarch or arrowroot starch with a little water to create a slurry and then add it to the mixture.
  • Place the skillet or pot in the preheated oven and bake for about 45-60 minutes, or until the sauce has thickened and the flavors have melded together. Stir occasionally during baking to prevent the beans from drying out.
  • Once the beans are done, remove them from the oven and let them cool for a few minutes before serving.
